Summary
Overview
Lauren Castle built Sweet Lauren's from a personal health journey into a $100M+ allergen-free cookie dough brand. After battling cancer at 22, she became obsessed with healthy baking and spent years perfecting natural cookie recipes. What started as a tiny farmer's market business in 2011 grew slowly through regional Whole Foods stores before a pivotal 2017 decision to go completely allergen-free transformed the company. Today, Sweet Lauren's is sold in over 30,000 stores and has made the Inc. 5000 list eight consecutive years.
Personal Transformation Through Cancer
Lauren's entrepreneurial journey began with personal tragedy and transformation. At 14, her mother was diagnosed with leukemia, and at 22, Lauren herself was diagnosed with stage 2 Hodgkin's lymphoma. During treatment, a therapist helped her reframe cancer from a curse into an opportunity for growth, sparking her interest in nutrition and healthy eating. This experience became the foundation for what would eventually become Sweet Lauren's.
- Lauren's mom was diagnosed with leukemia when Lauren was 14, beginning a decade-long battle
- At 22, Lauren was diagnosed with stage 2 Hodgkin's lymphoma just as she planned to move to California
- A therapist helped Lauren see cancer as potentially making her stronger and more empathetic
- Lauren completed treatment in 2007 and began studying nutrition and taking cooking classes
" Don't you see how it actually could be such a positive? Do you see how you could actually get through this? And this could make you stronger, more empathetic, appreciate life more, feel stronger than ever before. "
" I could process my own grief of getting sick, losing my mother into something that could then be a real benefit. "
Recipe Development and Farmer's Market Testing
While working at Levain Bakery, Lauren observed customers lining up for fresh, warm cookies and realized cookies were America's favorite food. She began obsessively testing recipes at home, replacing traditional ingredients with natural alternatives while eliminating white flour, corn syrup, and artificial ingredients. After winning a baking contest and receiving encouragement from a famous pastry chef, she launched at Smorgasburg farmer's market where customers overwhelmingly requested to buy the dough itself.
- Working at Levain Bakery, Lauren saw people travel internationally and line up down the block for fresh cookies
- Lauren became obsessed with replacing classic cookie ingredients with healthier alternatives like coconut oil and whole grain flours
- She won a local NYC baking contest and the judge told her 'you need to do something with this'
- At Smorgasburg, cookies always sold out first and customers repeatedly asked to buy the raw dough
" I'm talking every day in my apartment, I would just test different types of potato starch and tapioca starch, you know, in different proportions of it. So honestly, it was just so much playing around. I tried to hire food scientists to help me because I thought that like that would be the easy solve. And the food always tasted like a science project. "
